1cm of snow!
just made an early bird banana cake! we had snow here this morning and i was excited so got up early…now a bit tired!
walked Themba today….
And took Jemima to the vets for her jabs - and took a few photos in the area…
Banana cake recipe:
100 grams of butter/marg
175 grams of sugar
1/4 teaspoon salt
2 eggs
grated zest of 1 lemon
100 grams of raisins
4 x (over)ripe bananas, mashed
1 tablespoon lemon juice
300 grams flour
2 1/2 teaspoons baking powder
Cream butter and sugar together.
Add the eggs, churn until the mixture changes in color and becomes light and fluffy.
Add the lemon zest, and raisins, bananas and the lemon juice.
Sift flour and baking powder together and add.
Butter the tin, and bake for 75 minutes in an oven preheated at 180 °C.
